Petit Pecan Pies
makes 24 mini pies
ingredients:
- crust:
- 1/2 cup (1 stick) butter, room temp
- 3 oz package cream cheese, softened
- 1 cup all purpose flour
- filling:
- 1 cup chopped pecans
- 3/4 cup packed dark brown sugar
- 2 tablespoons melted butter
- 1 egg well beaten
- 1 teaspoon vanilla extract
- pinch salt
directions:
- Mix together the butter and cream cheese then add the flour and work it like you would pie or biscuit dough. Avoid working it too much or else it will not be soft at the end.
- Separate your dough into 24 and mold each piece to a mini muffin tin cup. A pestle works perfectly for this part and will save you loads of time but make sure to flour the pestle or it will stick to the dough.
- Combine all of the filling ingredients and mix well.
- Divvy up the filling into the muffin cups and bake at 325ºF for 15-20min or until the crust begins to turn golden brown.
- Let the baked pies, cool before gently pulling them out of the tin. As long as the filling doesn't touch the sides of the tin and is contained by the crust, they should come out easily with no resistance.
- Serve!!! Or pack up and send to friends and family! Just like most baked goods, it's best to keep refrigerated but it can survive out on the counter overnight without any issue. Now go enjoy!! These are super a addictive so beware!!
