 Garlic Caper Bread

Ingredients:

    • dough:
      • 200 g white bread flour
      • 100 g whole wheat bread flour
      • 200 mL water
      • 2 tablespoons oil
      • 1 tablespoon sugar
      • 1/2 teaspoon yeast
      • 1/2 teaspoon salt
    •    garlic caper butter
      • 2 tablespoons garlic 
      • 1/4 cup capers
      • 1/2 cup salted butter (1 stick)

    Directions: 

    1. Mix all of the dry dough ingredients in a bowl and then add the wet ingredients.
    2. Mix and knead until you have a ball of dough with no flour left in the bottom of the bowl. This should only take a minute or two. 
    3. Cover the bowl and let sit for 20 minutes.
    4. Uncover the bowl and knead the dough for an additional three minutes or until it appears smooth. Replace the bowl cover and set it in a warm place to prove for 1 1/2 - 2 hrs. 
    5. Make the garlic caper butter while you wait. Mince the garlic and capers and mix them into softened butter.
    6. Once the dough is done proving, put some oil on your hands, tools, and work space to prevent sticking and place the dough on your work surface.
    7. Roll the dough into a rectangle as large as you can.
    8. Spread the garlic caper butter over the surface of the dough.
    9. Now fold the dough into thirds and cut it lengthwise into 4 strips. 
    10. Lay two of the strips horizontally and two vertically so they meet in the center of each other. Layer the strips so that they are in an over/under sort of grid.
    11. Grab one of the ends that is currently sitting under another strip and move it clockwise to lay over the next strip over which should have originally been an "over" strip. Continue going around clockwise until you are back to these two strips. Now you will reverse and do it counter clockwise. Take an end that is under another, place it over the one next to it. 
    12. Do this until you can't stretch the ends to meet each other. Then tuck the ends under the loaf so they can't be seen. Watch the video to see an example
    13. Separate the layers of caper butter so they are more obvious and open.
    14. Using parchment paper move the shaped bread into a cast iron skillet and cover with plastic wrap to rise for 45-60 minutes 
    15. Bake at 400°F for 25-28 minutes. 
    16. Brush butter over the finished loaf while it is still hot.
