Jicama Mojito Relish
Ever wanted to eat a mojito instead of drinking it? Or thought, "Geez it sure would be nice to have a mojito with this." Then this is perfect for you because it tastes exactly like a mojito. Lime and mint with crisp and juicy jicama to carry it to your mouth and a bit of jalapeño to spice things up. Make this on taco night as a way to mix things up and brighten up your plate.

Jicama Mojito Relish
Ingredients:
- 2 1/2 cups jicama, diced
- 1/2 jalapeño, minced
- 2 limes, juiced
- 2 tablespoons fresh mint, minced
- pinch salt
Directions:
- Mix all of the ingredients in a bowl and let sit at least an hour so the flavors can meld.
- EAT. Put on tacos or anything in need of a relish.
