Strawberry Poppyseed Salad
I've made a lot of salads recently. Almost all of them have been absolutely delicious, but this one is my favorite. The dressing is sweet and creamy (without any dairy) while the kale gives a nice contrast. The real star of the salad, however, is the almonds. Somehow the almond flavor pulls the whole salad together and makes it truly addictive. I suggest cutting all of the ingredients small so that it mixes well and each bite can have a bit of everything in it.
Strawberry Poppyseed Salad
Ingredients:- 1/2 head romaine lettuce
- 1/2 bunch kale
- 1/2 cup almonds
- 8 medium strawberries
Dressing:
- 6 tablespoons (1/4 cup + 2 tablespoons) mayo or vegan mayo
- 2 tablespoons sugar
- 2 tablespoons red wine vinegar or lemon juice
- 2 tablespoons soy milk
- 1 tablespoon poppyseeds
- 1/4 teaspoon ground mustard powder
- pinch salt
Directions
- Chop the romaine, kale, and strawberries into small, bitesize pieces.
- Place the almonds in a food processor and blend them until there are small chunks for texture as well as some fine almond dust.
- In a small jar, put all of the dressing ingredients in, seal the jar, and shake to combine.
- Mix all of the salad ingredients in a bowl and top with dressing.
- Enjoy!!
