Ultimate Veggie Sandwich

Ingredients

  • 4 slices whole wheat bread
  • roasted red pepper hummus
  • 1-2 leaves kale
  • 1-2 leaves romaine
  • 1/4-1/2 red bell pepper, sliced
  • 10 sugar snap peas
  • 1/4-1/2 honeycrisp apple, sliced
  • handfull alfalfa sprouts, rinsed and dried
Directions:
  1. Liberally spread the hummus onto all 4 slices of bread. 
  2. Lay the kale in a flat layer on two of the slices followed by a layer of romaine.
  3. For the third layer, alternate between sugar snap peas and red bell pepper.
  4. Carefully place sweet apple slices on top.
  5. Spread the sprouts over the empty bread slices and place them on top of the layers. 
  6. Enjoy!
