Ultimate Veggie Sandwich

Ingredients
- 4 slices whole wheat bread
- roasted red pepper hummus
- 1-2 leaves kale
- 1-2 leaves romaine
- 1/4-1/2 red bell pepper, sliced
- 10 sugar snap peas
- 1/4-1/2 honeycrisp apple, sliced
- handfull alfalfa sprouts, rinsed and dried
Directions:
- Liberally spread the hummus onto all 4 slices of bread.
- Lay the kale in a flat layer on two of the slices followed by a layer of romaine.
- For the third layer, alternate between sugar snap peas and red bell pepper.
- Carefully place sweet apple slices on top.
- Spread the sprouts over the empty bread slices and place them on top of the layers.
- Enjoy!
