Maple Pecan Cookies - Vegan
My new favorite cookie to make. Super easy, delicious, and cute to boot. I gave them out as gifts for the holidays and everyone loved them.
Ingredients:
- 2 cups flour
- 1/2 cup brown sugar
- 1/4 sugar
- 1/4 cup maple syrup
- 1/4 cup oil
- 1/4 cup water
- 1 1/4 tsp baking powder
- 3/4 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
- Mix dry ingredients in a bowl and add the wet ingredients.
- Mix well. (If dough is overly wet add up to 1/4 cup flour to adjust consistency)
- Rest in the fridge overnight.
- Shape into 24 equally sized balls and press two pecans into each.
- Bake at 375°F for 12 minutes.
- Let cool and enjoy.
