Apple Mint Sandwich

Sweet, refreshing, crunchy, filling, and exactly what spring prescribed, this apple mint sandwich would make for a perfect picnic lunch. This recipe makes enough for 3 people to have sandwiches, however, the filling can be served on its own for charcuterie or as an appetizer with crackers and bread. Entirely vegan and can be made gluten free by using gluten-free bread.
It is worth noting that I used homemade coconut yogurt so if you don't make your own yogurt, feel free to see my yogurt brand comparison for store bought alternatives. I also used homemade bread and will post that recipe soon as well!!
Ingredients:
- 6 whole wheat bread slices
- Filling
- 1/2 cup plain coconut yogurt
- 1 honeycrisp apple, diced small
- 4 sprigs fresh mint, finely chopped
- 1 stalk celery, diced small (~1/4 diced)
- 2 teaspoons lemon juice
- 8 toasted almonds, chopped
Directions:
- Toast the bread while preparing your other ingredients.
- Place all of the filling ingredients into a bowl and mix thoroughly.
- Carefully spoon the mixture onto the toast and enjoy!!
- While the apple mixture is best fresh, it will stay good up to 2 days if you have leftovers.
