Ultra Fudgy Raspberry Brownies












As indulgent as they are fudgy, these raspberry brownies are so rich one is enough to satisfy even the biggest brownie lover. The fresh raspberries turn to sweet and tart pockets of refreshment in the sea of chocolate making them so delicious that this recipe may ruin you for other brownies.

Ingredients:

  • 2 Cups 60% cacao dark chocolate
  • 1/2 cup butter (one stick)
  • 3/4 cup light brown sugar
  • 3/4 cup sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 1 cup fresh or frozen raspberries
  • 1 cup mini semisweet chocolate chips
Directions:
  1. Preheat your oven to 325ยบ F.
  2. Add the chocolate and butter to a large, microwave safe bowl and microwave it 30 seconds. Stir and then repeat until the chocolate is completely melted.
  3. Add the sugars to the melted chocolate and mix.
  4. Then add the eggs one at a time, stirring each egg in completely before adding the next one.
  5. Mix in the vanilla.
  6. Sift the flour and salt into the bowl and combine.
  7. Once there are no clumps, fold in the raspberries and chocolate chips. 
  8. Line a 9x9 pan with foil or parchment paper for easy removal later and grease it. 
  9. Pour the batter into the pan.
  10. Bake for 30-40 minutes or until you stick a toothpick in 2 inches from the edge and it comes out clean. (I did my first batch for 30 minutes and they came out almost too fudgy but it will differ depending on your oven).
  11. Once baked, let them cool completely before removing them from the tin and cutting them. 
  12. Enjoy with a delicious cup of milk or coffee. They're so fudgy you're gonna need it.
