Mandarin Orange Salad
Refreshing mandarin and filling almonds makes this an easy and delicious salad for one person with no annoying leftovers.

Ingredients :
- 1 romaine heart, chopped
- 2 leaves radicchio, chopped
- 1 mandarin orange or clementine, peeled and broken into sections
- crushed almonds
- sesame seeds
- dressing:
- 1 scallion, chopped
- 1 tbs soy sauce
- 1 tbs dark brown sugar
- 1 tsp sesame oil
- pinch ground black pepper
Directions:
- In a jar, place all of the ingredients for the dressing (reserve some of the scallion for garnish), seal, and shake vigorously until combined.
- In a medium bowl, mix the romaine and radicchio and top with the orange pieces, almonds, and sesame seeds.
- Drizzle the desired amount of dressing and garnish with reserved scallion.
