Vegan Mozzarella

Ingredients:
- 1 cup water
- 1/2 cup raw cashews (soaked 4-6 hrs if possible)
- 3 tablespoons tapioca starch
- 1 tablespoon nutritional yeast
- 1 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 teaspoon red wine vinegar
Directions:
- Combine all ingredients in a blender and blend until completely smooth.
- In a sauce pan over medium high heat, pour the mixture and begin stirring constantly.
- Clumps will begin to form. This is normal. Keep stirring.
- Once there are more clumps than liquid, remove from the heat and continue to stir.
- Slowly it will all come together and become smooth.
- If it's not thick enough, return to the heat for a bit longer, stirring of course.
- Use immediately or keep refrigerated up to 4 days.
