Vegan Mozzarella

Ingredients:
  • 1 cup water
  • 1/2 cup raw cashews (soaked 4-6 hrs if possible)
  • 3 tablespoons tapioca starch
  • 1 tablespoon nutritional yeast
  • 1 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 teaspoon red wine vinegar 
Directions:
  1. Combine all ingredients in a blender and blend until completely smooth.
  2. In a sauce pan over medium high heat, pour the mixture and begin stirring constantly.
  3. Clumps will begin to form. This is normal. Keep stirring.
  4. Once there are more clumps than liquid, remove from the heat and continue to stir.
  5. Slowly it will all come together and become smooth.
  6. If it's not thick enough, return to the heat for a bit longer, stirring of course. 
  7. Use immediately or keep refrigerated up to 4 days.
