Queso - Vegan

Ingredients:

  • 1/2 cup raw cashews (soaked 4-8 hrs if possible)
  • 1 1/2 cups water
  • 3 tablespoons tapioca flour
  • 1 tablespoon nutritional yeast
  • 1 teaspoon apple cider vinegar or lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper
  • 1/2 a poblano pepper, finely chopped
  • 1 jalapeño, finely chopped


Directions:
  1. Place everything but the peppers in a blender and blend until smooth. 
  2. In a pan over medium high heat, combine the peppers and blended mixture.
  3. Stir continuously until clumps begin to form. (~5 minutes)
  4. Remove from the heat immediately and keep stirring as the mixture slowly thickens.
  5. If the mixture isn't as thick as you would like after ~2 minutes, return it to the burner and stir it over the residual heat for 30 more seconds, remove it, and stir again. 
  6. Serve!
