Queso - Vegan

Ingredients:
- 1/2 cup raw cashews (soaked 4-8 hrs if possible)
- 1 1/2 cups water
- 3 tablespoons tapioca flour
- 1 tablespoon nutritional yeast
- 1 teaspoon apple cider vinegar or lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon crushed red pepper
- 1/2 a poblano pepper, finely chopped
- 1 jalapeño, finely chopped
Directions:
- Place everything but the peppers in a blender and blend until smooth.
- In a pan over medium high heat, combine the peppers and blended mixture.
- Stir continuously until clumps begin to form. (~5 minutes)
- Remove from the heat immediately and keep stirring as the mixture slowly thickens.
- If the mixture isn't as thick as you would like after ~2 minutes, return it to the burner and stir it over the residual heat for 30 more seconds, remove it, and stir again.
- Serve!
