Maple Dijon Salad
I am of the firm belief that all meals should have balance. For every sweet, there should be a sour and for every texture, a contrasting one. Salads are no different and this lack of balance is what makes many salads down right disappointing. This salad was born out of my desire for delicious equilibrium. The bitter kale and radicchio are balanced by the romaine and fresh apple while the sweet and tangy dressing binds them together perfectly. I love this salad so much I made it for Thanksgiving and it was my favorite part of the meal! I hope anyone who makes it enjoys it as much as my family and I do.

Ingredients:
- 5 brussels sprouts, thinly sliced
- 1/2 a head of radicchio, chopped
- 1/2 a bunch of kale, chopped
- 1/2 a head of romaine, chopped
- 1 honey crisp apple, chopped
- 1/3 cup roasted almonds, chopped
- 1/4 cup dried cranberries
Dressing:
- 3 Tablespoons oil
- 2 Tablespoons lemon juice
- 2 Tablespoons maple syrup
- 2 teaspoons dijon mustard
- salt and pepper to taste
Directions:
- Place all of the dressing ingredients in a jar and shake until it is combined.
- Place all of the rest of the ingredients in a large bowl and drizzle with the dressing.
- Serve!
