Loaded Nachos
As a lactose intolerant person, one of the things I am faced with most is a severe lack of appetizers. They make something delicious, then drown it in cheese. Top offender: nachos.
So I made my own, vegan queso and all. The nice thing about nachos is that you can customize it to your liking. For instance, I wrote the recipe below based on what I did when I filmed making it, but if I could do it again, I'd add red onion to the mix as well. I also cut more than I needed so I could adjust the toppings as I ate.

Ingredients:
- canned black beans, drained and rinsed
- canned corn, drained
- spice mix:
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/2 lime, juiced
- 1/2 bell pepper - red or orange, diced
- 1 JalapeƱo, sliced
- grape tomatoes, quartered
- cilantro, chopped
- vegan queso
- tortilla chips
Directions:
- Mix the black beans and corn together in a bowl.
- In a small bowl, create the spice mix and sprinkle it onto the beans and corn until it is to your liking. I ended up using all of it, but it's up to you.
- Add the lime juice to the bowl and mix again.
- On a platter, place a generous helping of tortilla chips and top with all of the toppings.
- Finish the dish by spooning on the vegan queso and enjoy.
