Loaded Nachos












As a lactose intolerant person, one of the things I am faced with most is a severe lack of appetizers. They make something delicious, then drown it in cheese. Top offender: nachos.

So I made my own, vegan queso and all. The nice thing about nachos is that you can customize it to your liking. For instance, I wrote the recipe below based on what I did when I filmed making it, but if I could do it again, I'd add red onion to the mix as well. I also cut more than I needed so I could adjust the toppings as I ate.

Ingredients:

  • canned black beans, drained and rinsed
  • canned corn, drained
  • spice mix:
    • 1/2 teaspoon chili powder 
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon ground cumin
    • 1/4 teaspoon salt
    • 1/2 lime, juiced
    • 1/2 bell pepper - red or orange, diced
    • 1 JalapeƱo, sliced
    • grape tomatoes, quartered 
    • cilantro, chopped
    • vegan queso
    • tortilla chips
    Directions:
    1. Mix the black beans and corn together in a bowl.
    2. In a small bowl, create the spice mix and sprinkle it onto the beans and corn until it is to your liking. I ended up using all of it, but it's up to you.
    3. Add the lime juice to the bowl and mix again.
    4. On a platter, place a generous helping of tortilla chips and top with all of the toppings.
    5. Finish the dish by spooning on the vegan queso and enjoy.
